Teuchi (handmade) Soba Shuhari, located near Osaka Castle, has been selected as one of Japan’s notable restaurants for several years and has also gained attention on social media. In Osaka, it is known to be popular enough that people line up even on weekdays.
Shuhari is also well known for its stylish interior, and there are several special reasons why so many people visit.
1. In-house milling
At Shuhari, soba making begins with grinding and milling the buckwheat. Only carefully selected buckwheat from specific regions and varieties is used, and the entire process is done by hand to create handmade soba.
2. Various types of soba noodles
At Shuhari, several types of soba noodles are offered depending on the characteristics and texture of the buckwheat used.
・100% Buckwheat Soba (十割そば Juwari Soba)
Juwari soba is made using only buckwheat flour and a small amount of water without any wheat flour or yam as a binder. The name comes from the fact that the noodles are made with 100% buckwheat. Because it is made entirely from buckwheat, it has a rich aroma and texture.
・Coarsely Ground Soba (粗挽きそば Arabiki Soba)
This soba uses buckwheat that is ground coarsely with the husk, creating a light flavor while preserving the unique texture and smoothness of soba.
・Thick-cut Finely Ground Soba (太切り細挽きそば Futokiri Hosobiki Soba)
These noodles are cut thicker to better enjoy the flavor and aroma of buckwheat. They are commonly used for dipping soba or warm soba dishes.
3. Rich umami broth
Soba dipping sauce, known as tsuyu, plays an essential role in completing the flavor of soba. At Shuhari, several types of broth are prepared depending on how the soba is served. The tsuyu is made from a carefully balanced combination of kelp and fish, creating a deep umami flavor.
4. Carefully selected tableware
A variety of carefully chosen tableware is used to complement seasonal dishes. This enhances the presentation of the food and allows guests to enjoy the meal visually as well.

Waiting Line at Shuhari Tanimachi

I visited during lunchtime without a reservation, and there were already many customers. There was a line in front of the restaurant, and I also noticed several groups who seemed to be Korean tourists. It seems that the restaurant is quite well known internationally as well.
If the weather is very hot, cold, or rainy, it may be difficult to wait outside, so it is recommended to make a reservation in advance if possible.

There is a QR code on the wall of the restaurant where you can check the menu. If you decide what to order while waiting, you can place your order more quickly.
The menu is available in Japanese, English, and Korean, and it includes photos of the dishes along with simple explanations, so even first-time visitors can order with confidence.
Inside the Restaurant

The restaurant is not very large, but it can accommodate around 40 people including both table seating and counter seating. There is also a six-person table, so it seems possible to accommodate larger groups to some extent. The tables are not spaced very widely apart, but it was not uncomfortable for dining.
There is a restroom near the entrance of the restaurant, and coat hangers are available inside where you can hang your outerwear.

Teuchi Soba restaurant Shuhari offers not only soba but also a variety of drinks and side dishes.
Soba Menu

These are the hot soba dishes. The restaurant offers various types of soba such as kake soba, kamo nanban soba, and tempura kake soba, topped with ingredients like tempura, chicken, or duck.
Although there is an additional charge, it is recommended to change the noodles to 100% buckwheat soba (juwari soba) to fully enjoy the handmade soba. This allows you to experience the rich flavor and aroma of buckwheat even more.

These are the cold soba dishes. The menu includes options such as zaru soba, yamakake soba, and tenmori soba, offering a different taste and experience compared to hot soba.
For cold soba, it is possible to order extra noodles only. If you feel the portion is not enough, you can add an extra serving.
Drinks and Side Dishes



I visited Shuhari for lunch. Since I strongly associated the restaurant with being a soba specialty shop, I was a little surprised when I first saw the drink menu because of the wide variety of alcoholic beverages available. There were many options such as highballs, soju, Japanese sake, whisky, gin, sours, beer, and fruit liqueurs, almost making it feel like an izakaya.
However, after looking at the side menu besides soba, it made sense. There were just as many side dishes as there were soba options, so it seemed like a great place to enjoy drinks with small dishes while having soba as the main meal.
Soba with Tempura

This is hot tenkake soba from Teuchi Soba Shuhari in Osaka. I changed the noodles to 100% buckwheat soba (juwari soba), and the noodles were so good that they hardly needed any explanation. I could clearly taste the natural flavor and aroma of buckwheat.
What impressed me most was the tempura. It included various ingredients such as eggplant, carrot, shrimp, and green pepper, and every piece was delicious. I am not usually a big fan of carrots, but even the carrot tasted sweet and delicious, which made me feel that the restaurant uses very high-quality ingredients.

This is tenmori soba, the cold version of the same menu. Cold soba is served with soba tsuyu (dipping sauce), and you can enjoy it by picking up the noodles with chopsticks and dipping them into the sauce.
I also ordered jako gohan, which is available only during lunch. It was nice to have a simple bowl of rice together with the soba.

For cold soba, sobayu is also served. Sobayu is the hot water used to boil soba noodles and contains the aroma and nutrients of buckwheat. After finishing the noodles, you can pour some sobayu into the remaining soba tsuyu and drink it.
Shuhari is a soba specialty restaurant in Osaka where buckwheat is milled in-house and the noodles are handmade. If you are looking for a soba restaurant popular among locals near Osaka Castle, it is definitely worth visiting.
