Shibire Noodles Rosokuya is a shibire ramen specialty shop with its main store in Ginza, built around the concept of “a taste so good it gives you a tingling sensation.” “Shibire” refers to a numb, tingling sensation in Japanese, describing the unique numbing spiciness created by ingredients such as Sichuan pepper. The signature dishes here are known for this distinctive shibire-style heat.
Although the most popular menu item is the mapo noodles, I came across this place while searching for a really good tantanmen. I was not particularly fond of tantanmen before, but after trying it once, I completely fell in love with it. For a while, it even became a routine for me to have tantanmen at Rosokuya whenever I visited Umeda.
If you plan to visit during lunchtime in Umeda, you should be prepared to wait in line for around 30 minutes. In my experience, there was a queue almost every time I visited, but the food is so good that it easily makes you forget the wait.

Choosing Your Menu While Waiting

Choosing your menu at Rosokuya is relatively simple. Basically, you can follow the steps below.
1. First, choose your main dish
2. Select the noodle portion (regular or large)
3. Choose the spice level
4. Add toppings and drinks if needed
The spice levels are divided into levels 1, 2, and 4, with level 2 being the standard choice. If you are not good with spicy food, level 1 is recommended. You can also add more spices later during your meal, so if it is your first visit, starting with level 1 is a safe option. Please note that the sour and spicy noodles (sanratanmen) do not allow spice level selection.
During lunchtime, a small bowl of rice is provided for free. If you do not need it, you can let the staff know. However, the portion of rice is small, and when eaten together with the soup, it offers a different flavor compared to the noodles, so it is worth trying at least once.

The dishes offered at Rosokuya, such as mapo noodles, yaki cheese mapo noodles, sour and spicy noodles, and tantanmen, are all well-known, so many people visit after deciding on their order in advance. In addition, there is a separate guide in the store that explains each dish in Japanese, English, and Chinese, so if you would like to learn more about the menu, it can be helpful to take a look.

If you are waiting in line, please make sure that all members of your group have arrived before joining the queue. Holding a place in line and having others join later is not permitted.
Also, while waiting, it is recommended to decide on your menu, noodle portion, and spice level in advance to ensure a smoother experience.

Interior of Rosokuya

The restaurant is smaller than expected, and there are no table seats—only counter seating. Personally, I found counter seating to be better for focusing on the food.

There is space under the counter and beneath the seats where you can place your belongings. Small bags can be stored without any issue, but in winter, it can be a bit difficult to store bulky outerwear.
Ordering at the Kiosk

After being guided by the staff and entering the restaurant, you will first place your order at the kiosk located on the left side of the entrance. You can switch the display to English from the top left of the screen, so if you are not familiar with Japanese, you can change the language before ordering. Once you have finished your order, a staff member will guide you to your seat.
Since customers are usually guided into the restaurant one group at a time, there is rarely anyone waiting directly behind you while ordering. This allows you to take your time and order without feeling rushed. In addition, each menu item is displayed with photos, making it easier to choose.
As mentioned earlier, cash payments are not accepted, so it is recommended to prepare your payment method in advance.
How to Enjoy It Even More

At the counter seats, disposable chopsticks, wet wipes, and drinking water are provided, and paper aprons are also available. To prevent the soup from splashing onto your clothes, it is recommended to use a paper apron.

In addition, Rosokuya provides various condiments to help you enjoy the dish even more. Sansho oil, vinegar, and chili peppers are available, so you can adjust the flavor to your liking.
Personally, I highly recommend the sansho oil, which adds a numbing, tingling spice to the dish. It enhances the flavor and makes the dish even more delicious and satisfyingly spicy.
Mapo Noodles and Tantanmen

This is Rosokuya’s most popular menu item, the mapo noodles. I personally like eggs, so I tend to add a boiled egg topping to most dishes.
Rosokuya’s mapo noodles are characterized by the numbing spiciness of sansho and a deep, rich flavor, offering a more intense and addictive taste compared to typical mapo noodles.

Next is the tantanmen, which is my personal favorite at Rosokuya. I also recommend adding an egg here, and the broth is especially rich and flavorful. I suggest first enjoying the original taste of the broth as it is, then after having some noodles and toppings, adding a generous amount of sansho oil to enhance the spiciness and flavor.
Finally, having the remaining broth with rice makes the meal even more satisfying and filling.

I recommend trying the black oolong tea as well, as it helps cut through the richness and makes the meal feel more refreshing. Personally, I found that it pairs very well with the food and enhances the overall experience.
Having tried tantanmen at several places while living in Osaka, I found Rosokuya’s tantanmen to be the most satisfying. So far, I have not found another place that I would want to revisit more than Rosokuya. As a popular spot where even locals line up, I highly recommend Rosokuya for both its mapo noodles and tantanmen.
