The proteins in beef begin to transform into flavorful juices at around 65°C (149°F). If the heat is too low, the juices cannot be fully drawn out, while if it is overcooked, the juices escape and the flavor diminishes. Therefore, medium rare is said to be the ideal temperature to bring out the full flavor of the beef.
You can also adjust the doneness to your liking by grilling it yourself on a hot stone, and if you wish to use one, simply ask the restaurant staff.
