Although there are many gyukatsu restaurants in Japan, the unique feature of Gyukatsu Kyoto Katsugyu is that customers can choose their preferred cut of beef and grill it themselves on a personal hot stone, adjusting the doneness to their liking.

In Japan, it’s quite rare for restaurants to offer free refills of rice, soup, or salad. However, at Gyukatsu Kyoto Katsugyu, you can get free refills of rice, akadashi (red miso soup), and cabbage simply by adding their official LINE account as a friend.

If you would like to order an additional regular-sized rice, it costs 210 yen, akadashi 160 yen, and cabbage 120 yen, all before tax.

At Gyukatsu Kyoto Katsugyu, a Japanese restaurant specializing in beef cutlets, gyukatsu is served medium rare by default.

The proteins in beef begin to transform into flavorful juices at around 65°C (149°F). If the heat is too low, the juices cannot be fully drawn out, while if it is overcooked, the juices escape and the flavor diminishes. Therefore, medium rare is said to be the ideal temperature to bring out the full flavor of the beef.

You can also adjust the doneness to your liking by grilling it yourself on a hot stone, and if you wish to use one, simply ask the restaurant staff.
